We were sorely lacking the left-overs I’d hoped for, so the noodle obsession continued, This time I turned a WednesdayChef recipe into a one-bowl meal with some kale, cucumber and carrot. Unfortunately, the overcooked noodle situation also continued (from crunchy in the middle to mush while I grabbed the slotted spoon), but even mush tastes good sauced with sesame, peanut butter and garlic.
(The picture is even darker than usual because the light over the table blew up with an impressive flash when the husband flipped it on just before dinner. He’s fixed it now. Super husband.)
