My future, it is smoky. Or so I sincerely hope after stir-frying a batch of beef in oyster sauce and one of gingered broccoli (pick stir-fried broccoli with ginger from the drop-down menu; the recipe I used omits the garlic and sesame oil) from Ken Hom’s Complete Chinese Kitchen. There was some coughing when my cooking oil turned out to have a lower smoke point than expected, but the deeply savory, tender beef and broccoli with a clear gingery kick were well worth it and will be repeated soon. Let there be smoke.
