Mondays are slow around here. The day starts early so the husband or I can catch a train and the brain fog never quite lifts after that. By the time dinner rolls around, I just want to close my eyes, which is dangerous during meal preparation. So easy and quick food comes in handy. This chicken salad with radishes for instance. A chunk of meat left over from Sunday’s rotisserie chicken, yogurt mixed with a bit of mayonnaise for sauce and lots of radish halves. Crunchy, creamy, and meaty, it makes for an excellent Monday dinner.
